test(notification-service): add unit tests and clean up Co2Level

Add unit tests for AirQualityService (16 cases) and TelegramNotificationService
(5 cases) using MockRestServiceServer.
Remove unused color fields from Co2Level enum.
Add .env to .gitignore.
